Creamy Parmesan Chicken

You are probably already aware that I love easy to make recipes. Well, I have another one to share with you! Sometimes it is easy to get stuck making the same recipes over and over again. I am guilty of doing this to chicken far too often. But once I found this recipe, it became a new star in the rotation.

This chicken is very versatile, it goes splendidly with a variety of side dishes and you really can’t mess it up. How great is that?


Creamy Parmesan Chicken (serves 2)Modest Bites- Creamy Parmesan Chicken 026

  • 2 T mayonnaise
  • 2 T Parmesan cheese
  • 2 boneless, skinless chicken breasts
  • 1/4 c breadcrumbs
  • Salt and pepper
  • Garlic powder
  • 1/2 t Italian seasoning

In a small bowl mix mayonnaise, Parmesan, garlic powder, and Italian seasoning. Spray a square baking dish with cooking spray and lay chicken breasts in a single layer. Sprinkle chicken breasts with salt and pepper. Spread mayo mix on top of chicken breasts. Then, sprinkle breadcrumbs over chicken breasts until evenly coated. If you would like, sprinkle some additional Parmesan cheese and Italian seasoning over the top. Bake in a 425 degree oven until cooked through, 30-45 minutes.

Modest Bites- Creamy Parmesan Chicken 004Here are our cast of characters! The chicken breast I had was REALLY big so I cut it in half to make two regular size portions.  I would suggest, if you’re feeling ambitious, to pound the chicken breasts out to flatten and tenderize.

Modest Bites- Creamy Parmesan Chicken 016Salt and pepper your chicken breasts and then spread the mayonnaise mixture over the top. Try to make sure to coat the sides of your chicken, as well. Don’t let them miss out on the cheesy goodness!

Modest Bites- Creamy Parmesan Chicken 018Sprinkle with breadcrumbs until evenly coated. I also added some additional Parmesan cheese and Italian seasoning, but that is completely optional.

My chicken breast took 30 minutes to cook, but depending on its size and thickness, your chicken may take more or less. Just check it and use an instant read thermometer to make sure the chicken is at 165 degrees Fahrenheit.

Modest Bites- Creamy Parmesan Chicken 026Doesn’t that just look scrumptious? I served this chicken with some alfredo rotini veggie pasta and steamed broccoli. But this chicken would be great with stuffing, mashed potatoes, risotto, or just about anything else. The mayonnaise mixture keeps the chicken very moist; personally, I have made this several times and it has never been dried out.

When I first found this recipe I was a little skeptical about topping my chicken with mayonnaise, but once I tried it I was happily surprised! Whether or not you are having reservations about it, just give it a try and you will love it!
