Time for breakfast! If you’ve ever had a frittata before, then you know that they are very easy and customizable. These little frittatas will be the perfect start to your Valentine’s day festivities. ❤
Mini Broccoli-Cheddar Frittatas
- 6 eggs
- 1/3 cup milk
- Salt and Pepper, to taste
- 1/2 cup cheddar cheese, plus more for sprinkling
- 1/2 cup steamed broccoli, chopped
Directions: Coat the silicone muffin pan with non-stick cooking spray. Crack eggs into a large measuring cup or bowl with spout. Add milk, salt, pepper, and cheese to eggs. Whisk until completely combined. Pour the egg mixture evenly among the 6 muffin cups. Sprinkle the chopped broccoli into the cups. Top with additional shredded cheddar cheese. Bake in a 375 degree oven for 15 minutes or until completely set and lightly golden on top.

Coat your silicone mold with cooking spray and set aside.
Crack six eggs into a bowl with a spout or a liquid measuring cup. I do a lot of mixing of small batches in liquid measuring cups because it is much more convenient for pouring and cleaning. I am all about making things easier!
Add in the remaining ingredients except for the chopped broccoli. I like a lot of pepper!
Whisk it all together.
Remember how we mixed up our eggs in a measuring cup? This is where it comes in handy to pour our eggs into the cups.
Sprinkle your chopped broccoli evenly among the cups and then add a final toss of cheese on top of each heart.
Bake the frittatas in a 375 degree oven for about 15 minutes or until the eggs are set and the cheese is melted and lightly browned. I laughed when I pulled these out of the oven because they had puffed up so much!
I love how these mini frittatas came out as perfectly adorable hearts! It is a delicious healthy choice for breakfast, or heck – breakfast for dinner! I paired the frittatas with cantaloupe and turkey bacon, which was mighty tasty.
I tell you what… these also paired deliciously with a big ol’ plate of biscuits and gravy! These little frittatas were a definite breakfast win!
