Nacho Night: Black Bean and Velveeta Cheese Dip

Some days you just need junk food. I know, it’s bad for you but come on… Who can resist cheesy nacho deliciousness? No one, that’s who! It’s all made acceptable by piling the cheesy chips with veggies and tasty toppings.

These nachos were such a fantastic treat! There are so many flavors and textures to enjoy, not to mention this meal is so simple to pull together. This was just what I needed on a weekday evening.

Black Bean and Velveeta Cheese Dip

  • 1 can black beans (about 2 cups), drained and rinsed
  • 1 can Rotel, undrained
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne (optional)
  • 1 lb Velveeta, cubed
  • 1 cup shredded Mexican style cheese

Directions: In a medium saucepan mix the black beans and Rotel. Stir in the garlic powder, cumin, chili powder, and cayenne if you want a little extra spice. Heat the bean mixture over medium high heat until warm and bubbly. Reduce the heat to low and stir in the Velveeta and shredded cheese. Continue heating the mixture on low until the cheese is completely melted and the dip is smooth and well combined. Serve warm over tortilla chips and enjoy!

Here are our cast of characters for this sinfully delicious dip. A tiny 1 pound block of Velveeta, one can of Rotel, one can of black beans, 1 cup shredded cheese, and your classic taco seasonings.


Cut your Velveeta into cubes and try not to sneak a piece, or two… or three…


In a medium saucepan toss the beans, Rotel, and your seasonings. Warm the mixture until it is hot and bubbly.


Now it’s time for the cheese!


Throw in the cheeses and try to be patient!


Once everything is completely melted and warm go ahead and do a quick taste test… yum!!!


Now that you have the perfect dip get all of your favorite nacho toppings together. Look at all of those colors, how bad can that really be?


Spoon a generous amount of cheese dip over your chips, don’t be stingy!


Now pile on all of your favorite toppings… oh yeah baby!


Don’t mind me! Ignore me while I eat my weight in nachos. Sometimes this is just what I need on a busy weeknight. Delicious!
