With how hectic and worn out I’ve been lately I have needed to come up with ultra fast and easy meals to fill our bellies.
Do you like pizza? Do you like quesadillas? Can’t decide which you want the most? Don’t decide, make these super-duper pizzadillas! Did that sound like an infomercial? If so, are you sold?
Anyways, you’ll be more than happy when you make these Pizzadillas (isn’t that a fun word?) because not only will you have happy eaters at your table, you’ll have supper on the table in no time at all. That’s the kind of meal I’m looking for nowadays.
- 6-8 flour tortillas
- 1 1/2 -2 cups shredded mozzarella cheese
- Pizza sauce, for dipping
Directions: Warm a skillet over medium heat. Meanwhile, measure 1/4 cup mozzarella onto half of a tortilla and top with a few slices of pepperoni. Fold the tortilla in half and lay in the hot skillet. Cook the pizzadilla until the first side is golden and crisp then flip and continue cooking another minute or two until golden. Set aside and repeat until all of the ingredients have been used up. Warm the pizza sauce while the pizzadillas are cooking. To serve, use a pizza cutter to slice the pizzadillas into 4 sections and serve with the warmed pizza sauce for dipping. Enjoy!

Tortillas, look I’m being healthy by including some whole wheat tortillas, cheese, pepperoni, and pizza sauce.
Scoop about 1/4 cup of cheese onto half of a tortilla.
Lay a few slices of pepperoni on top.
Fold those little pizzadillas in half and toss them into a hot skillet. Cook them until the first side is golden and crisp then flip and continue cooking on the other side until golden.
Cut the pizzadillas into wedges, get into my tummy little yummies!
Serve them up with warmed pizza sauce, delightful!
