One of the downfalls of cooking for two people (our toddler hardly counts) is that sometimes I get a little carried away and we basically have to eat leftovers for an entire week. That can get a little tedious and so trying to revamp leftovers has become a fun game for me so we don’t lose our minds eating the same thing over and over again.
Last week, I made tacos… a lot of tacos. So many tacos.
To get creative with the taco meat I decided to slap it on some baked potatoes as a hearty and tasty alternative. There isn’t much a of a rhyme or reason to these taters, ya’ll can top them with your favorite meat and toppings and have a ball!
Start with these perfect baked potatoes, yum!
I had some extra black beans that needed to get used up. Hello!
Next let’s plop some tasty taco meat on top.
Drizzle my favorite enchilada sauce on top, fo’rizzle!
Cheese! Lots and lots of it.
Finish with the rest of your favorite taco toppings: pickled jalapenos, olives, and sour cream were hanging out in my refrigerator but chopped green onions, cilantro, or diced tomatoes would also be fantastic!
