Summer is nearly here which means fresh berries are becoming more and more abundant and that makes me super happy!
I’m always so disappointed when I grab a beautiful pint of strawberries- bright red, not bruised, and cute as a button… but I bite into it and grimace at the sour taste of betrayal as I look at the bright white center. That’s what I get for trusting beautiful red strawberries in the winter months. I take it as a personal offense when that happens.
Am I being too sensitive?
Where was I going with this? Oh yes… Whenever I am faced with a disappointing batch of strawberries I have to find a way to bring some life into them.
Cue copious amounts of sugar and a healthy dollop of butter.
This dessert is seriously so delicious and incredibly easy! Anybody you share it with will become your best friend and probably try to steal the leftovers from you.
That’s just a forewarning. But make this strawberry cobbler anyways.
- 1 stick unsalted butter, melted
- 1 1/4 cup granulated sugar, divided
- 1 cup all purpose flour
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla
- 2 cups strawberries, chopped into bite sized pieces
Directions: Preheat your oven to 350 degrees. Coat a 3 quart baking dish with butter or cooking spray (butter tastes better). Melt 1 stick of butter and set aside to cool slightly. In a bowl whisk together 1 cup sugar, flour, and baking powder. Add milk and vanilla to dry ingredients. Whisk together until smooth. Next, whisk in melted butter. Pour batter into baking dish. Sprinkle the strawberries evenly over the top of the batter. Last, but not least, sprinkle the remaining 1/4 cup sugar over the top of the strawberries and bake in the preheated oven for 50-60 minutes or until golden brown and bubbly. Allow to cool slightly before serving.
I love how simple this cobbler is, you probably have everything you need to make this right now!
Grab yerself a stick a buttah…
Schmear the butter all over your baking dish, the more the merrier.
Add the flour, 1 cup sugar, and baking powder to a medium sized bowl.
Add the vanilla to the milk and stir to combine.
Pour the milk mixture into the dry mixture and whisk until smooth.
Last, but not least, pour the whole stick of melted butter into the batter and drool a little.
That’s what I’m talkin’ bout!
Pour the beautiful batter into your buttered baking dish…
And sprinkle the diced strawberries evenly over the top of the batter. I was dazed by the beautiful red strawberries.
Sprinkle the remaining 1/4 cup granulated sugar over the top of the strawberries.
Bake in a preheated 350 degree oven for 50-60 minutes or until the whole kit n caboodle is golden and bubbly.
Your house will smell so delightful. I want to wear this scent as a perfume.
Allow it to cool for 5-10 minutes before dishing it up on a pretty plate to the crowd of drooling people crowding around you in the kitchen.
Trust me, they will crowd and they will drool.
Add a nice little dollop of whipped cream.
