Strawberry Cobbler

Summer is nearly here which means fresh berries are becoming more and more abundant and that makes me super happy!

I’m always so disappointed when I grab a beautiful pint of strawberries- bright red, not bruised, and cute as a button… but I bite into it and grimace at the sour taste of betrayal as I look at the bright white center. That’s what I get for trusting beautiful red strawberries in the winter months. I take it as a personal offense when that happens.

Am I being too sensitive?

Where was I going with this? Oh yes… Whenever I am faced with a disappointing batch of strawberries I have to find a way to bring some life into them.

Cue copious amounts of sugar and a healthy dollop of butter.

This dessert is seriously so delicious and incredibly easy! Anybody you share it with will become your best friend and probably try to steal the leftovers from you.

Homemade Applesauce

There is something special about homemade applesauce. It is one of those convenience foods that we all take for granted, we can easily forget how simple it is to make our own.

Applesauce is one of those foods that I can just about guarantee Sam will eat. When he turns his nose up at everything else at least I always have a jar of applesauce handy for my picky eater.

Watermelon Limeade

While living with a toddler I have found that I need to be creative when he decides he no longer wants to eat a certain type of food. One day, Sam will eat (insert name of food) like there is no tomorrow, the next day he throws it to the dog. I have been told that this is normal toddler behavior, but it sure can be annoying.

In order to reduce waste I have been keeping a baggy in the freezer to make smoothies for him when I get enough fruit collected, throw a little spinach or kale into the mix and I feel pretty good about that healthy snack.

Lemon Bars

Spring is here! Hallelujah! I could sing from happiness at the thought. The tree in our front yard is beginning to blooming and I love to see the beautiful pink flowers! Every year I try to pay attention to when the trees first bud and sprout leaves, half of the time I miss it and suddenly realize that everything is green. Does this happen to anybody else?

Along with Spring we are also getting ready to celebrate Easter and that really marks the beginning of season for me. With warmer weather heading our way I am in the mood for something bright and delicious. I plan on making these lemon bars within the next few days and try to keep myself from eating the entire pan in one sitting.

Strawberry Hand Pies

Happy Pi Pie day everybody! March 14th (3.14) is one of the easiest days for me to remember, because pie is fantastic of course! While I am not a huge fan of math, I am a fan of pie and I will celebrate any day that allows me to eat these tasty treats!

Since it is just the three of us in our little house I didn’t think making a whole pie for us was a very good idea (additionally, Sam is only 14 months old and won’t be eating much pie anyways). I decided to make these tasty individual hand pies and I am very happy that I did! Not only are these much easier to store, but you get to enjoy having your own little pie to munch on.

Now that spring is coming I am craving fresh, bright flavors and these strawberries definitely delivered! I can’t wait to get fresh strawberries from the farmers market to make these again.

Baby Food Collection

Last year was an amazing adventure with our little man. Hubby and I had a lot to learn about parenting and we are definitely still learning. One of the things I am so grateful for is that I have been able to stay home with Sam and watch the amazing transformation he has gone through in his first year. I don’t think I could have tackled cloth-diapers or homemade baby food if I had to work on top of it. I applaud those who work and still keep on top of everything around the house because even though I stay home, I still feel like a hot mess most days. But we muddle through it.

Easy Fruit Salad

It almost embarrasses me to share this as a recipe, but it makes such an easy and quick side that I don’t want to keep it from you. In which case, I share this so you have yet another incredibly simple side dish option for those times where you need something quick but are feeling a lack of creativity and drive. With a 9 month old running the house, I feel like this a lot! If you have kids, a picky husband, or both: this is so easy and customizable that you can make it to suit your family’s cravings.
