Bacon Dijon Potato Salad

Fireworks are just around the corner and I’m so excited about that! I have said it before and I’ll say it again, I LOVE fireworks!

Independence Day has always been one of my favorite holidays. Getting together with family, enjoying a picnic, sparklers, s’mores, and the glorious sight of big glittery fireworks up in the sky… I love it all! Except for the sweltering heat and bugs, but I can look past that for the right potato salad.

This is the BEST potato salad. I’m serious, the bestest potato salad ever! Should I say it again? The. Best.

You put a spell on me

Oh guys, I have missed you! It’s been a little crazy round here and I have missed talking with ya. I started working part time at the grocery store as an overnight stocker and it has drained me. I’m still spending my days running after my toddler, add two nights where I don’t get any sleep and it leaves this mama hurtin’ for a nap. It seems to take me a while to catch up and feel energetic and then I have to do it all again. Phew, it’s not the most ideal situation but I’m keeping my eyes open for other opportunities. Maybe a bakery, or catering job is in my future so I am keeping my eyes forward.

And now I’m here. It’s been a few weeks since I’ve touched base with you and I promise to try to be better about this whole bloggy-blog!

I know I’m a little late to the game but let me show you how much fun we had this halloween. My mother-in-law and I had a ton of fun planning an adult halloween party and it was a much needed distraction!

Bats! This was a such a simple DIY halloween decoration, love it! My hubby helped by drawing the original bat outline and then I grabbed some black cardstock and some pretty sparkly scrap book paper, then traced- cut- repeat. Fold the wings up a bit to add a 3D effect and haphazardly tape them to the wall in a somewhat sweepy bat formation. Sweepy? Forgive me, I am running on a 2 hour nap since yesterday morning.

Next, I have to show off these crazy cool cupcakes I made for the party. Not to toot my own horn but- toot toot! I made a batch of regular ol’ vanilla cupcakes and a batch of red velvet cupcakes, dramatic and delicious! I found those spiderweb cupcake wrappers on amazon. We also found the spider mold on amazon, gotta love the place!

Just so you know, if you choose to work with cotton candy to make a cool “web” decoration wait until the VERY last second to add the cotton candy. Cotton candy is so persnickety and will begin melting from any heat or moisture from the frosting. The cotton candy did make a neat web effect, but within a couple of hours it had completely melted with made this lady frown.

We can’t forget about the rest of the food… A murderously delicious cheesecake. I forgot to include a photo of the crazy good zesty strawberry puree we poured on top. Bloody delightful! Don’t forget the eyeball deviled eggs. We flavored these bad boys with horseradish and lightly tinted them green, added a slice of pimiento stuffed green olive and smiled at how clever we were.

It wasn’t all sweets and eyeballs at this halloween party, we also made zesty Italian beef and enjoyed it on hawaiian rolls. Last, but certainly not least, I made a batch of jalapeno popper crescent rolls that disappeared very quickly. Don’t worry, I’ll share those bad boys with you soon enough.

Decorations! There are so many crazy cool halloween decoration available and it was fun setting it all up. A haunted typewriter, homemade spell ingredients and potions, a mythical wreath, and more. What fun!

Mr. Sam got to stay up long enough to say hello and roar around in his dragon costume and then it was bedtime for that little boy!

I mean dragon.

It was a very accurate costume.

I was the renaissance maiden to his dragon and hubby decided to be Kavinsky. If you’re not aware of what/who that is a google and youtube search will show you the strange 80’s techno music that Kavinsky is linked to. It’s all a little bit over my head to say that least. No, my husband was not my knight in shining armor to save me from the dragon, but at least he decided on something that he actually liked, even if it makes me roll my eyes.

Sam had a good time going to different events and showing off his costume, everyone thought he was the cutest little dragon and I agreed!

I can’t believe fall is finally here! That means Halloween is tomorrow, Thanksgiving is next week, and Santa Claus is already coming down the chimney.

Also, my son is a toddler sized model. I can’t get over his curly blond hair and those blue eyes are instant mommy melters! His hobbies include pretending everything is a gun, making animal noises, making messes, and refusing to eat healthy meals prepared with love.

Despite the difficulties of toddlerhood, I love this boy to the moon and back!

In other news, my hubby has been working hard with his business partner to build a new business over this last year. It has consumed a lot of time but we continue to be optimistic.


Welcome Elite Oil Technologies, check out the website! There is a live website that is being revamped slowly but surely to give visitors their best experience. Nano-oil fell into their lap the end of last year and it has taken quite a bit of time to get everything up and running but we’re seeing the light at the end of the tunnel.

After a long road with website set backs, setting up an office, getting the inventory stocked, and biting our nails in anticipation I am ready to get the show on the road!

When the site originally launched we cheered, but it quickly became apparent that there were many areas that could be improved upon and that is what is going on behind the scenes now.

The good news, there is a working website where you can order products to your hearts content and we celebrated that fact with a soft opening party last weekend. Of course, I catered and enjoyed planning the party so much.

We had a nice little get together, tons of food, and good company.


My favorite thing of the whole day! Lemon cupcakes with blueberry buttercream and coffee cupcakes with mocha buttercream… oh heaven!

I made these tiny little cupcake toppers to make them extra special. They were a bit time consuming but worth it!


We had plenty of food! Better too much than too little.

Veggie platter, cheese and crackers, mini cornbread bites, scrumptious little smokies, spritz cookies, brownies, and heavenly cupcakes. I ate a lot that day.

And then we had leftovers and I ate a whole lot of those too.


For the simplest way to fancy up the tables I grabbed pretty gold scrap book paper, a handful of clear bowls, and gold wrapped candy made a nice simple centerpiece. The balloons were a fun touch as well.


We had plenty of options for drinks! I made a crazy simple and crazy good “sangria” with a bottle of mixed berry juice and a bottle of moscato. If I’m in charge of the food then I am going to make something I like. I know you’ll like it too!

Mickey Mouse Clubhouse Birthday Bash!

This last weekend my little man and I drove 5 hours to see my high school best friend, Christina, to help her pull together a joint birthday party for her little Mouseketeers! I can’t believe her little girl is almost 3 and her baby boy just turned a year old. Their birthdays are about 1 month apart so it just made sense to do a combined party for the two of them.

It was wonderful to see our kids playing while Christina and I pulled everything together in the kitchen. Our inner kids came out as we planned the Mickey Mouse Club House themed treats and managed to pull it all together by the seat of our pants!

I never thought I would say this, but I really really enjoy party planning! Despite the stress of time management and making sure all of our grand schemes come together I really enjoy the whole process.

First things first… the food! Food is on my mind all day, everyday, 24/7. This is my favorite part of party planning. Oh come on, what’s better?

Christina baked a beautiful cake and made homemade fondant. Together we pulled our amateur decorating skills together and made a precious Toodles cake. Donald’s Bubble Bath was our drink (Hawaiian punch with marshmallows and whipped cream), along with vegetables from Goofy’s garden, Minnie’s Bowtie Pasta, Toodle’s Fruit Salad, Hot Diggity Dogs, Pluto’s Sticks (candy coated pretzels), and Daisy’s Paint Brush (candy dipped rice crispy treats). I think we did a pretty good job getting creative with these treats!

After finalizing the food we brainstormed different activities. I was surprised to see how many “Pin the nose/tail on Mickey” ideas there were floating around the internets, but then it struck me that we could do “Pin the Bow on Minnie”. Christina pulled out her sketch book and drew Minnie and we printed off several bows for all the kids to color before taking turns trying to place the bow while blindfolded. Two activities in one. Good deal!

Along with eating, mingling, playing this game, and opening presents we kept plenty busy during the party.

The birthday boy and girl seemed to have a good time! What is it with toddlers and hamming it up for the camera? Tell Josie to ‘say cheese’ and you’ll be impressed! Bradyn was so intense while eating his cake, look at that face! “Don’t even think about it!”

Mr. Sam kept me on my toes. 2016-07-09 15.57.16Between trying to help with the party and continuously chasing after him when he would try to wander out of the room, I am pretty sure I got my workout for the week! Where is my Fitbit when I need it? It was like trying to herd cats!

But we got to see Nana Lisa and my cousin Emily along with other friends that I haven’t seen in years. It was great to catch up.

During clean-up I sat Sam down in front of the piano to keep him distracted long enough for us to finish up. He and Josie made a great duet! 

Today, I wore a shirt that had piano keys across the chest, he thought they would have the same effect and decided to try it out while we were out in public. Isn’t motherhood an adventure?
